Serves 10 people

For the Citrus Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

To make the Cocktail (produces 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch

Method

Making the Syrup: Combine the listed components in a saucepan, heat until it reaches a gentle boil, mixing until the sugar dissolves. Next, take off the burner and leave to cool fully. Decant into a sealable bottle, cap it keeping it chilled, it can be stored for around four weeks.

Preparing the Batch Mix: Pour all the liquids into a large bottle, leave to sit for 60 minutes, then strain , ideally through muslin, to ensure it's fully clarified.

To serve: Measure 85ml of the batch mix to a stirring glass containing ice, and stir gently for one minute to chill. Pour to a frosted cocktail glass or a similar vessel, garnish with a few cranberries and finish by giving it a quick spritz of the essential oil over the drink.
